Magic-Magic Bars (aka “Sprinkle Pie”)

My daughter, Chloe, said “let’s make some sprinkle pie” and that’s just what we did. One of Chloe’s favorite things in the world is sprinkles (not just eating them- haha PLAYING with them, pouring them, touching them, shaking them- you get it). She eats “all natural” 80% of the time and we avoid food dyes when we can. But let’s just say when it comes to holidays (and yes, this is a St. Patrick’s Day recipe)- we break all the rules! I am not that strict and want her to be able to enjoy everything in moderation. SO I whipped out the Funfetti cake mix and Lucky Charms and we made Magic-Magic Bars or as she kept calling it- “sprinkle pie”. I love Chloe’s name for it. I saw a recipe on The Domestic Rebel where she used cake mix as the magic cookie bar base- (so I totally give her credit for giving me the inspiration to create this recipe).

Ingredients:

  • 1 box Funfetti cake mix

  • 1 egg

  • 1/2 cup vegetable or canola oil

  • 14 oz can of sweetened condensed milk

  • 1/2 cup white chocolate chips

  • 1/2 cup Lily’s unicorn baking chips

  • 1/2 cup Fruit Loops

  • 1/3 cup rainbow sprinkles

  • Lucky Charms “marshmallows” (we pre-sorted out the marshmallows from an entire box of cereal)

  • 1/2 cup Freeze-dried strawberries (you don’t need these but we happened to have them)

  • 1/2 cup Mini Jet-Puffed Fun Mallows - Fruity Flavors

Steps:

  1. Preheat oven to 350°. Generously oil a 13x9 glass baking pan with vegetable or canola oil.

  2. Combine your cake mix, egg, and oil in a bowl to make a soft dough. Press the dough evenly into your 13x9 pan. Bake for 10 minutes. *Take out but keep the oven on.

  3. On top of your base add fruit loops, white chocolate chips, Lily’s unicorn swirl baking chips, and rainbow sprinkles. Drizzle the sweetened condensed milk evenly over the top. Bake for 10 minutes. *Take out but keep the oven on.

  4. Add freeze-dried strawberries, Lucky Charms marshmallows (pre-sorted), and Mini Jet-Puffed Fun Mallows - Fruity Flavors to the top layer. You may have to “press them in”. ***HONESTLY: Chloe was shaking on extra sprinkles at this point and the food stylist/artist in me added extra baking chips and fruit loops at this point to make it eye-catching. Nothing is exact with me so add what you need. Bake for 7 minutes (no longer or the Lucky Charms/marshmallows will brown)!

  5. Remove from the oven. They will need to completely cool before cutting by either sitting over-night or in the refrigerator for 2 hours. Enjoy!
