My two year old daughter…
had been asking me to “make a board” since the moment she woke up this rainy Wednesday. She has made two boards with me in the past: one with Chik-fil-a and another with Peeps. So, she associates board making with french fries and candy. I looked in the fridge and decided we were going to make a SALAD BOARD. Jumping to the end of this story… we had so much fun and she loved the foods just as much as the other boards we have made!
Let’s Build It:
I chose a white serving platter and loaded it up with spring mix.
We worked our way from bottom to top. I started with edamame for protein. Added pomegranates, blueberries, Sprout’s honey roasted pecans, blueberry vanilla goat cheese,
and finished off the top layer with Trader Joe’s cheddar cheese cracker sticks (which I later crunched up as croutons), roasted red peppers, and avocados (last for freshness).
Lastly, we have been growing pansies; they are “edible” or non-poisonous flowers. Chloe, my daughter, has been watering them everyday. So, we picked a few and added them as garnish!
Top it off with your dressing of choice!
This is her deconstructed salad, with some Yum Earth gummy bunnies added to the plate. She doesn’t sit still very long, but this fun plate and these cute utensils have helped her stay at the table a little longer and eat a couple extra and adventurous bites!
