Baked Peanut Butter Banana Oatmeal

Yes to any recipe that requires one dish. Yes to any recipe that lasts multiple meals. Yes to balanced meal (protein, whole-grain carbs, and fruit). HECK YES to “dessert” for breakfast. When my daughter, was around 1 1/2, I would feed this to her (to fill her belly) as a “before bedtime snack”. If you've read any of my recipes, you probably know I don’t write them like “traditional recipes”. I add a little bit of my voice and honesty. So here it is…

Preheat your oven to 350.

  • Generously butter a 8x8 baking dish. (The rest of these steps can be added to the baking dish vs. a separate bowl.)

  • In that dish, mash 2 ripe bananas (I used the back of a fork to do this)

  • Add 1 1/2 Cups of Oats

  • 1 1/2 Cups of Milk

  • My secret ingredient (but you can omit): 1/4 cup of your favorite coffee creamer (seriously if you like hazelnut creamer, add it, cinnamon, add it. SO good and people WILL ask you about it).

  • Add 2 heaping spoonfuls of peanut butter. (You will need to use the back of a fork to “mash it” in, similar to the bananas. And I NEVER measure peanut butter perfectly- laugh)

  • Top with freshly sliced strawberries

  • Bake for 20 minutes

  • Top with something sweet: I used mini dark chocolate chips, shredded coconut, and honey (I think this step is a must).
